Well night one of our Menu Planned week was a success! Tonight I made Quinoa and Turkey Stuffed Pepper. I feel like I have posted a recipe to these before so here are the basics:
- Boil peppers for 5-10 minutes or until softened
- Combine 1/2 lb cooked ground turkey, 1/4 c. onions, peppers, and spinach, 1/2 can black beans and 1 cup cooked quinoa. Should look something like this…although this is without the quinoa:
- Stuff your peppers!
- Top with 1 tablespoon cheese and then place in 350 degree oven and broil until tops are browned.
We served our finished peppers with lettuce, salsa and greek yogurt (in place of sour cream). Do you all have a favorite stuffed pepper recipe? What do you usually put in yours?
