Skinny Mini Breakfast Casserole

After making a yummy supper I thought I would keep kickin’ it in the kitchen and get prepared for the rest of the week. Ive seen lots of similar recipes on Pinterest like this but none that were quite what I wanted. Below is my own recipe for skinny mini breakfast casseroles!


7 eggs
1/4 c. wilted spinach
2Tbs each- onion, green pepper, red pepper
6 slices chicken lunch meat
Salt and pepper Preheat oven to 350°.

Combine all ingredients together then pour or spoon into a lightly oiled muffin pan. Bake 20 minutes or until egg is cooked through. Enjoy!


I plan to eat mine with a little bit of cheese. You could also put them on an English muffin or bagel thin.
