Whats Cookin’ – Lightened Up Spinach Dip

I am so sad that my three day weekend is coming to an end, but the scales will be happy. This weekend there were a few extra drinks downed and a few extra sweet treats made. However, I was able to lighten up one of my holiday/cookout favorites. I always love serving spinach dip inside Hawaiian Bread so when the thought crossed my mind to substitute in some Greek yogurt, I knew I had to make it! Below is my take on spinach dip, lightened up!

Lightened Up Spinach Dip

1 package frozen chopped spinach, thawed & well drained
16 oz. Greek yogurt
1 package Knorr vegetable recipe mix
1/2 c. light Hellmans mayo
1 tablespoon garlic seasoning (garlic salt or powder)

Combine all ingredients together and chill until serving. Great with pretzels, crackers, Hawaiian bread, tortilla chips and more!

Sunday Stills – Version 2.4

Its been a long while since I’ve done a Sunday Stills post, but in my effort to start blogging more, I thought I would start this back up!

today: Got a few more things done around the house and got some baking done! I find baking can be so therapeutic!

want to be: back on track with my lifestyle changes. I’ve been off a little these past few weeks, and I know I need to make some changes starting tomorrow!

blessings: My husband! He has been so helpful in getting things done around the house this weekend. Feeling so lucky to have him in my life!

Remembering all those in my life who have fought for the freedom I can enjoy today!

loving: the country life. Tonight we spend night #2 by the fire and I enjoyed every minute of it.

grateful: for family, both close and far away. Its hard to not be home this Memorial Day weekend, but knowing that no matter where I am, my heart is with my family.

 Sunday stills take about five minutes to write – it’s my intentional way to ponder the week that has passed and to prep for the week to come. It’s a single print out of the busy cycle of life, a pause, a way to plan, and to remember to breathe in the midst of the everyday.

Whats Growing in my Garden + Eating/Buying Local!

Wow! Once again I seemed to have taken a little break from this whole blogging thing…I swear I will get into a habit of better blogging. But I think I chose a great time to get things going again. I have finally started planting my garden…eek! I know, most people think why grow it when you can just buy it, but there is just that satisfaction of know I grew it. Plus, with the way my hubby eats tomatoes, peppers and beans, its way cheaper to plant a garden! Continue reading
