Skinny Sloppy Joe Casserole

First I should say that the can of manwich I found in the cupboard may have been expired by a few months but I was craving sloppy joes and didn’t want to make my own sauce (easy to do…will share that recipe sometime too)! I found the original recipe last night while reading some of the blogs I follow. As soon as I saw the recipe my wheels started turning and I knew that I could make into something a little healthier. There are a few things I am going to do different next time like using reduced fat crescent rolls, 2% cheddar cheese and adding in some more veggies to the mix! But before I babble on too long, here is the recipe many of you have been waiting for! Ok, so only like 2 people asked for it, but its dang delicious so everyone should try it….Kyle even told me I could make it again, and that’s a win in my book!

Skinny Sloppy Joe Casserole (Makes 4 Servings

1 Can Crescent Rolls
1 Can Manwich Sloppy Joe Mix
1 Lb Lean Ground Turkey
1/2  Cup Cheese (I used cheddar)

Optional Add-ins:
Onion, Green Peppers, Garlic, Yellow Pepper

Preheat oven to 350 degrees. In a greased 8×8 or 9×9 pan, spread half the crescent roll dough into the bottom. Cook ground turkey until browned/cooked through. Add in optional ingredients like onions, peppers, garlic, etc…I used those three but plan to add more next time! Next add in manwich mix and heat until bubbly. Pour meat mixture into pan. Sprinkle cheese on top then add the other half of the crescent rolls. I rolled/smushed the crescent rolls out on a cutting board to make sure it was the right size to cover the meat/cheese mixture. For some extra flavor I added garlic salt on the top of the crescent rolls. Finally, bake until the crescent rolls are golden; about 15 minutes. Enjoy!

Divide into 4 portions and enjoy! Per serving this is about 475 calories. I think if I used the reduced fat crescent rolls and the 2% cheese I could get this amount down some. Also you could make the servings a little smaller and maybe add some more veggies, fruit or a salad for sides. You could also try using different meat options. I had some ground chicken in the freezer too but I’m saving that for some chicken meatballs later in the week!

Monday Moments – The First of 2014

I really planned to post this last night but then fell asleep watching the national championship game. Then I was going to post this at lunch today, but ended up skipping lunch because I was swamped at work. Now I’m working from home, but decided to take a few minutes to post this!

today: had a crazy day at work! I really just want to spend the rest of the night under a warm blanket doing nothing….but that won’t happen.

want to be: feeling better! ready for whatever 2014 throws our way.

blessings: making it to and from work safely. The roads are not the worst I’ve ever seen but definitely always happy when I make it to my destination safely.

thinking: seems like lately I’m always thinking of the 1,000,000 +1 things I have to do…

planning: my workouts for the week. excited to have a workout buddy for tomorrow after work!

writing: this post. nothing much else…thinking about getting a head start on my bucket list and sending some cards to friends just to say hi.

loving: the cold weather (kinda)! I always wanted to know what it would be like to live in alaska!

So wordpress tells me that today is indeed my 1 year Blog-Iversary! Hard to believe I’ve been writing as the Country Wife for 1 year…but that means I’ve also been married for over a year! Tonight I spent some time looking back at old posts and old blog pictures. I can tell that over just one year (not constant posting) that I really let myself show my true side by the end of this year. When I first started blogging I don’t think I really knew what kind of voice I was going for; but now I know. My voice is me! Sounds silly right? I follow so many different bloggers and I realized the ones I like best are the ones who are real. They aren’t trying to pretend that they are someone else, or they or living a better life than the rest of us. They show their true lives, and I hope to do the same!
So let me finish this post with a big THANK YOU to all my readers/likers/followers. I know I didn’t post all the time and maybe not about the most interesting things, but I will cherish that I have my first year of marriage chronicled here, and I got to share it will all of you!

Summer Has Arrived

So I was just thinking its been a long time since I’ve written a post for everyone, 13 days to be exact! Those past 13 days have been jammed full and I feel like I’ve been running around like a chicken with my head cut off (can I say that? Please don’t be offended (: )! I decided instead of typing out everything I’ve been doing it would be easier to share some pictures. I will tell you though, most of these pictures are of things from the garden, things I’ve canned or am planning to can. Our garden has been blessing us with a ton of wonderful produce and I’m trying to make sure I can prepare as much of it as possible to enjoy this fall/winter and into next spring.

Whats Cookin’ – Lightened Up Spinach Dip

I am so sad that my three day weekend is coming to an end, but the scales will be happy. This weekend there were a few extra drinks downed and a few extra sweet treats made. However, I was able to lighten up one of my holiday/cookout favorites. I always love serving spinach dip inside Hawaiian Bread so when the thought crossed my mind to substitute in some Greek yogurt, I knew I had to make it! Below is my take on spinach dip, lightened up!

Lightened Up Spinach Dip

1 package frozen chopped spinach, thawed & well drained
16 oz. Greek yogurt
1 package Knorr vegetable recipe mix
1/2 c. light Hellmans mayo
1 tablespoon garlic seasoning (garlic salt or powder)

Combine all ingredients together and chill until serving. Great with pretzels, crackers, Hawaiian bread, tortilla chips and more!
