Skinny Angel Shortbread Sugar Cookies

Finally a somewhat healthy sugar cookie! Ok so not finally, I’ve actually had this recipe since 2007 but I only recently figured out the nutrition associated with it. After a crazy week at work I promised my co-workers that I would make some cookies…well at 9:30 last night after realizing I didn’t have everything I needed for chocolate chips, I found this recipe. It does use all your basic cooking ingredients like sugar, butter, oil and flour, but with only 124 calories for a cookie, you have to try it! I want to try and find better substitutes for the oil and possibly use cane sugar and wheat flour. Below is the recipe and some variations I made on a few batches! Enjoy!

Skinny Angel Shortbread Sugar Cookies

1 c. Sugar
1 c. Powdered Sugar
1 c. Oil
2 Sticks Butter
2 Eggs
1 tsp. Vanilla
1 tsp. Baking Powder
1 tsp. Salt
4 c. + 2 Tbsp. Flour

Cream together sugars, butter, oil and eggs. Once combined, add remaining ingredients and mix until well blended. Chill dough for 1 hr. Preheat oven to 350 degrees. Scoop onto baking sheet and press with a buttered glass covered in sugar. I used a number 40 scoop. I think its a tablespoon, maybe 2 tablespoons…I’m bad at estimating ūüôā Bake for 9-11 minutes, just until the edges are a light golden brown. Enjoy!

Now, K was a little worried these might not be good without chocolate. So on a dozen or so that came out I added chocolate frosting to the top…YUM! I also added chocolate chips to the last bit of dough and those turned out pretty good too!

I hope you give the cookies a try. Like I said, just plain they are 124 calories per cookie. So while not the healthiest, there are far worse options when it comes to cookies!

4 Ingredient Homemade Applesauce

Last Friday night in our “frenzy” to use up some apples, K suggested that we make some applesauce. In my experiences growing up apple sauce always seemed like such a hard thing to make. There was coring, peeling, cooking, mashing/grinding, then more cooking. But thanks to my wonderful Betty Crocker cookbook, I found a very simple and fairly quick way to make apple sauce! I will tell you, this is more of a rustic applesauce and not the same consistency you get from the grocery store BUT it taste a million times better!!!

4 Ingredient Applesauce

4 medium cooking apples (1 1/3 lb), peeled, cut into fourths and cored
1/2 cup water
1/4 cup packed brown sugar or 3 to 4 tablespoons granulated sugar
1/4 teaspoon ground cinnamon

Combine apples and water in a large pot and bring to a boil. Add remaining ingredients, stirring to break up the apples. Reduce heat and let simmer to continue cooking apples. The apples will become very tender and break up. If you want to have smaller chunks, use a potato masher to mix up the apples. Enjoy!

Seriously one of the easiest recipes ever! It took about 25-35 minutes for my mixture to get cooked, but I also tripled the recipe. It would probably be less time if you just do the 4 apples. We enjoyed some that night over ice cream and then froze the rest in some mason jars (yes you can freeze food in jars!). For those watching your calories, you can have a 3/4 cup serving for about 100 calories! Healthy and delicious!

Skinny Sloppy Joe Casserole

First I should say that the can of manwich I found in the cupboard may have been expired by a few months but I was craving sloppy joes and didn’t want to make my own sauce (easy to do…will share that recipe sometime too)! I found the original recipe last night while reading some of the blogs I follow. As soon as I saw the recipe my wheels started turning and I knew that I could make into something a little healthier. There are a few things I am going to do different next time like using reduced fat crescent rolls, 2% cheddar cheese and adding in some more veggies to the mix! But before I babble on too long, here is the recipe many of you have been waiting for! Ok, so only like 2 people asked for it, but its dang delicious so everyone should try it….Kyle even told me I could make it again, and that’s a win in my book!

Skinny Sloppy Joe Casserole (Makes 4 Servings

1 Can Crescent Rolls
1 Can Manwich Sloppy Joe Mix
1 Lb Lean Ground Turkey
1/2  Cup Cheese (I used cheddar)

Optional Add-ins:
Onion, Green Peppers, Garlic, Yellow Pepper

Preheat oven to 350 degrees. In a greased 8×8 or 9×9 pan, spread half the crescent roll dough into the bottom. Cook ground turkey until browned/cooked through. Add in optional ingredients like onions, peppers, garlic, etc…I used those three but plan to add more next time! Next add in manwich mix and heat until bubbly. Pour meat mixture into pan. Sprinkle cheese on top then add the other half of the crescent rolls. I rolled/smushed the crescent rolls out on a cutting board to make sure it was the right size to cover the meat/cheese mixture. For some extra flavor I added garlic salt on the top of the crescent rolls. Finally, bake until the crescent rolls are golden; about 15 minutes. Enjoy!

Divide into 4 portions and enjoy!¬†Per serving this is about 475 calories. I think if I used the reduced fat crescent rolls and the 2% cheese I could get this amount down some. Also you could make the servings a little smaller and maybe add some more veggies, fruit or a salad for sides. You could also try using different meat options. I had some ground chicken in the freezer too but I’m saving that for some chicken meatballs later in the week!

Lightened Up Apple Crisp

Those of you that are my friends with me on Facebook may remember a few weeks back when I posted that K won Best Dessert at my families Christmas cook off this year…he did not make this recipe! His recipe has a lot more sugar and butter; probably why it won! Well Friday night we were both craving something sweet and had a lot of extra apples from the local FFA fruit sale. He suggested I make his apple crisp recipe, but being a competitor in my work’s Biggest Loser competition, I knew I needed to make a healthier version. I browsed the internet for a recipe that seemed better and here’s what I came up with. Its pretty close to the recipe I found except that I made mine in individual ramekins (a present from a white elephant gift exchange).

Lightened Up Apple Crisp

4 apples, peeled, cored and sliced
2 tsp. cornstarch
1 Tbsp. cinnamon
1 cup old-fashioned rolled oats
1/4 cup whole-wheat pastry flour
1/3 cup + 2 Tbsp. brown sugar
1/4 cup (1/2 stick) melted butter

Mix apples, cornstarch, cinnamon, and 2 Tbsp of brown sugar in a bowl. Once coated, place apple mixture equally into to large ramekins or 4 small ramekins. Next mix oats, flour, remaining brown sugar and butter until crumbly. Spoon mixture on top of the apples. Bake at 375 for 20-25 or until apples are fork tender. Enjoy!

We served ours with a little bit of ice cream (would have done frozen yogurt, but we didn’t have any). These are not my any means a fat free dessert! But compared to drenching the apples in a sugar syrup, this is much healthier. This was a special treat and definitely satisfied my sweet tooth…at least for a few days. In the next couple days I will share K’s original recipe for Apple Crisp!

Whats Cookin’ – Lightened Up Spinach Dip

I am so sad that my three day weekend is coming to an end, but the scales will be happy. This weekend there were a few extra drinks downed and a few extra sweet treats made. However, I was able to lighten up one of my holiday/cookout favorites. I always love serving spinach dip inside Hawaiian Bread so when the thought crossed my mind to substitute in some Greek yogurt, I knew I had to make it! Below is my take on spinach dip, lightened up!

Lightened Up Spinach Dip

1 package frozen chopped spinach, thawed & well drained
16 oz. Greek yogurt
1 package Knorr vegetable recipe mix
1/2 c. light Hellmans mayo
1 tablespoon garlic seasoning (garlic salt or powder)

Combine all ingredients together and chill until serving. Great with pretzels, crackers, Hawaiian bread, tortilla chips and more!

Banana Oatmeal Cookies!

Hello my long lost blog followers/readers! Have you missed me? I’d like to think I was taking a little “Winter Break” from blogging. I am glad I chose tonight to make my Spring debut because I have a great recipe for you! Lately everyone at work seems to be bringing in all sorts of sweet treats and candy; NOT GOOD FOR MY DIET! While putting away¬†groceries¬†the other night I found two boxes of blueberry muffin mix so I decided to make those for work, that is not my recipe however! So being the nice wife that I am, knowing that K was working out in the cold and wind, I thought I would make him some soup for when he got home.
